50g Pancetta lardons

25g Panko breadcrumbs

A generous drizzle of Extra-virgin olive oil

Pinch of salt & pepper

1. Pre-heat the oven to 180C.

2. Mix all of the ingredients together in a mixing bowl

3. Tip out onto a baking tray and spread evenly

4. Place in the oven and bake for 10 mins until the panko has taken on a golden colour and the lardons are crispy

5. Store in an air tight container and enjoy!
